Banana Oatmeal Muffins

I tried these muffins for the first time last week and they were a HIT. “Best muffins ever” was actually the response. The recipe is super simple and the oats makes the texture of these muffins fantastic. Whatever you do, don’t omit the topping – it’s the game changer. Recipe from beyondthechickencoop.com.

Ingredients
1.5 cups oats
1.25 cups cake flour
1/2 cup brown sugar
1.5 tsp baking powder
1 tsp baking soda
pinch salt
sprinkle of cinnamon
1 egg
1/4 cup oil
1 tsp vanilla essence
3 ripe bananas, mashed

Topping:
1/2 cup oats
1/4 tsp cinnamon
2 tblsp brown sugar
2 tblsp melted butter

Mix the dry ingredients (oats, flour, sugar, cinnamon, baking powder, baking soda & salt) together in a large bowl. Mix the wet ingredients (egg, oil, vanilla & banana) together and add to the dry ingredients. Stir gently until combined. Spoon into a muffin tin (12) lined with paper cases and sprinkle over combined topping ingredients. Bake at 180 for 18min.

Note: If the muffins are a touch dry (or if the bananas are on the small side), add 2 tblsp milk to the batter the next time
