Spiced Roasted Nuts with Rosemary & Sea Salt


These nuts! What a revelation. Such an easy snack to make, and so much healthier and more impressive than chips. They aren’t hot; they are spiced rather than spicy. If you want them to have a bit of spicy warmth, increase the cayenne pepper. This amount of nuts fits on one baking sheet for me – I have a smallish oven and quite a small baking sheet. But if you have a monster oven, I would make double this amount. Because it is impossible to stop eating these nuts. Take them to work or serve them when friends pop over for dinnner or a glass of wine. Delicious.

Spiced Roasted Nuts with Rosemary & Sea Salt

250g mixed nuts (I like peanuts, cashews & almonds)
2 tsp butter, melted
2-3 tsp dark brown sugar
2 tblsp chopped fresh rosemary
1/2 tsp cayenne pepper
1/2 tsp cumin
Flaked or coarse sea salt, if needed

Preheat the oven to 180°C. Combine all the ingredients in a bowl and toss well to combine. If your nuts were unsalted, toss through some flaky sea salt (or crush some coarse sea salt). But if the nuts were salted already, leave as is. You can always add more salt afterwards if need be.

Spread the nuts out evenly over a piece of baking paper on a baking sheet and roast for 15min, mixing well halfway through. Once they are done, stir through an additional tsp or two of chopped fresh rosemary and let cool completely. Store in an airtiight container. And good luck not devouring the whole batch!
