So you’ve probably heard of Overnight Oats. You definitely have if you’re on Pinterest, and/or read any kind of food blogs. Hailed as a “breakfast sensation”, it has been on my list to try for ages. Partly because I hate being out of the loop in food trends, but also because a good healthy breakfast while working is a challenge. I finally remembered (some months after pinning a whole bunch of Overnight Oats variations to my Pinterest ‘breakfast ideas’ board) and thought I’d start with an easy recipe that I could make from things currently in the kitchen. And it is AMAZING. Where has overnight oats been all my life??? Approximately 1 minute to prepare the night before, and I made it all the way to lunch time without a mid-morning snack. Which is completely unheard of.
Apple & Peanut Overnight Oats

1/4 cup oats
1/4 cup milk
1/4 cup plain yoghurt
1 tblsp peanut butter
1 tsp honey
0.5 tsp vanilla essence
1/4 tsp cinnamon
1 green apple, peeled and cubed
Peanuts, to garnish
Ideally, you need at least a 350ml jar with a screw lid that seals tightly. But you could use a bowl or a Tupperware. The process is quite simple: the night before, add all the ingredients to your jar (except the peanuts). Stir till combined, close the lid and put it in the fridge. In the morning, sprinkle the peanuts on the top and ta-da! Breakfast is served.
You can eat it as is (delicious), or heat it up. If you’re a thirsty morning person, add milk like you would to cereal. Honestly the best food idea that I’ve come across in a long time. There are going to be many more overnight oats variations posted on here in the near future!
(General tip: add chopped fruit to the oats when you make it, but add nuts or seeds in the morning when you eat it, or else they will lose their crunch.)
